Our History
Ever since her first job at 14 years old working at a well-known hot dog and Italian beef joint in her hometown outside of Chicago, owner Kathy Mammina-Gharst, a full-blooded Sicilian, dreamt of someday opening a Chicago style restaurant of her own.
In 2023 Kathy and her husband Michael purchased the 123-year-old building located on the brick Main Street (coined "The Bricks" by the locals) in rural Wellsville, KS.
The two-story building needed to be completely gutted and renovated, but Kathy saw the potential to create a beautiful, loft Airbnb upstairs and her dream restaurant on the first floor!
The excitement expressed by the locals and people coming from miles away has been overwhelming! I guess we shouldn't be surprised, I mean who doesn't love Chicago style cuisine!

At On The Bricks, we offer a variety of mouth-watering hot dogs on a poppy seed bun and dragged thru the garden, juicy Italian beef sandwiches with giardiniera, homemade Italian sausage sandwiches with sauteed green peppers and homemade savory chili with a top-secret ingredient. We also offer gluten-free options.
